Grilled Marinated Wahoo

INGREDIENTS

  • 4 wahoo steaks
  • ½ cup olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • Cayenne pepper (amount to taste)
  • 1 pinch of crushed chili pepper flakes
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons minced garlic

DIRECTIONS

  1. Make the marinade by mixing together in a bowl the olive oil, lemon juice, lime juice, cayenne pepper, and chili flakes.
  2. Rinse and pat dry the wahoo steaks and place in the marinade.
  3. Cover the marinating fish and place in in the refrigerator for 30 minutes.
  4. Heat a griddle pan to medium heat, transfer wahoo to the pan, adding salt and pepper to the fish steaks to your taste. Or place over a grill.
  5. Flip the wahoo several times to ensure even cooking, adding garlic about halfway through the cook time. The steaks should take about 10 to 12 minutes’ total.
