How to Reverse Sear Steak

Ideally cook your steak in a Big Green Egg Grill (in my opinion the only way to grill). Therefore I will tell you how to do it first on an EGG, then for those who are not as fortunate to own a Big Green Egg, I will tell you how to do it on a regular grills. tarting off with a good, thick steak is extremely important! Go to your Butcher and have him cut you a 1.75” – 2” thick Rib Eye or Strip (I like Rib Eye).

Big Green Egg Setup: Set up your Big Green Egg for indirect cooking with the plate setter legs in the up position and the grate sitting on top of the legs. Set temp at 250degrees.

Steak Preparation: Brush the entire steak with olive oil and season to taste. I use Beef U by Pork U Seasonings and Rubs (available at Wassi’s Meat Market, Melbourne, FL) Allow steak to reach room temperature.

Cooking: Once your Big Green Egg reaches 250, you are ready to cook. Place your steaks directly on the grate. Be sure that you use some type of temperature probe (i.e.: Thermopen, BGE Thermometer, etc.) to monitor your internal temp. Remember that you are still going to sear the steaks, so pull them off approx. 10 degrees less than your desired doneness. (internal temp of 115 deg.)

Once your steaks have reached your desired internal temperature, remove from the Big Green Egg. Take out the plate setter. Set your Big Green Egg up for direct grilling and increase the temperature to 650-700 degrees. Once the Egg has reached temperature, you will be ready to “sear”. Place steaks directly over the flame. (Remember to burp!!) Sear for 1 minute on each side with the lid closed. TIMING IS VERY IMPORTANT when cooking at this high of a temperature. When you have finished searing the second side, remove steaks and cover with foil. Allow your steaks to rest for approx. 10 minutes.

IF YOU DON’T OWN A BIG GREEN EGG

1. Preheat your oven to 250°F.

2. Place your steaks on a rimmed baking sheet fitted with a rack. Season generously with salt and pepper.

3. Roast in the oven for approx. 45 minutes , until an instant- read thermometer reads 115°F for medium rare. (Check them around the 35-minute mark first, as oven temperatures and steak thickness will vary.) Let rest 5 minutes.

4. In an EXTREMELY hot cast iron skillet or grill, cook steaks one minute per side, until a dark brown crust forms.

5. Let rest another 10 minutes, slice, and serve.
