Millie’s Kitchen at Cottage Park Yacht Club
Ingredients (Serves 4)
3 lbs haddock fillet
4 tbs minced jalapeno
4 tbs minced cilantro
1/2 squeezed lemon
3/4 cup dry white wine
1 stick butter
Olive oil
Flour for dredging
Pasta of your choice
Extra cilantro for garnish
Steps to Cook
– Cut fillet in half dredged in flour
– Place in small frying pan
– Use 4 tps olive oil
– Pan sear fish each side for 4 minutes
– Add butter, cilantro, lemon and jalapeno
– Cook for 2 more minutes
– Add dry white wine
– Cook until white wine is evaporated
– Serve over pasta
