INGREDIENTS (Serves 4)
• 1 lb. cooked shrimp
• 2 tbsp. olive oil
• 3/4 cup white wine (dry)
• 1/2 cup butter
• 2 cloves garlic, minced
• 1/2 onion, chopped
• 3 plum tomato, chopped
• 1/4 cup black olives
• 1 cup of baby spinach
• 1/4 cup feta
• Salt and pepper to taste
• Parsley for garnish
DIRECTIONS
- Heat oil in pan.
- Add shrimp and garlic, and cook for a couple of minutes.
- Add wine and cook for another two minutes.
- Add butter, olives, tomato, onion & spinach, and cook until soft. Stir to coat well.
- Serve over linguine, and add chunks of feta cheese.
- Garnish with Italian parsley. Serve with toasted garlic bread.
