INGREDIENTS:
4 tbsp. butter
1/4 cup all-propose flour
1 small yellow onion and green pepper chopped fine
2 celery stalks chopped
2 cloves garlic minced
1-pound andouille sausage sliced into small pieces
1 tbsp. Cajun seasoning, salt and pepper
1 bay leaf
1 bottle of amber beer
1 tbsp. of Worcestershire
1 large can diced tomatoes
4 cups chicken broth
1 1/2 pounds of medium shrimp
3 green onions diced
DIRECTIONS:
• In a large pot on medium-low heat melt butter and stir in flour. Cook, stirring constantly, until dark caramel colored (about 10-minutes). Add onions, peppers and celery–stir until softened (about 5 minutes more). Add the bottle of beer, garlic and sausage, then season with Cajun seasoning, salt and pepper. Stir in bay leaf, diced tomatoes, Worcestershire and chicken broth.
• Let simmer on low for one hour stirring every so often.
• Add shrimp at the very end. They only need three to five minutes to cook and you are ready. Garnish with the green onions.
