INGREDIENTS
• 2 dz. Scallops with Shells Very Clean
• 2 dz. Mussels with Shells Very Clean
• 150 grams of Lobster Meat
• 200 grams of Calamari
• 2 dz. Shrimp
• 4 Cups White Rice
• 1/2 Cup Peas Cooked
• 2 Red Onions
• 2 Cloves Garlic Minced
• 2 tablespoons of Tomato Paste
• 2 tablespoons of Yellow Hot Peppers (Peruvian)
• 1⁄2 cup of Carrots Diced and Cooked
• Parmesan Cheese
• Red, Green, Yellow Peppers Cut Length Wise
• Salt & Pepper
DIRECTIONS: SERVES 4
- Cook your white rice following package instructions and set aside.
- On medium size pan heat about 4 tablespoons of oil and cook the peppers, onions, tomato paste, garlic and Peruvian yellow peppers cook for about 2 minutes then add the seafood, carrots and peas.
- Wait for seafood to finish cooking, add the cooked rice and mix well.
