This month we would like to share some of our family-favorite fish recipes with everyone. Most of what we eat is what we catch or harvest. Our meals consist of fish and venison mostly. There is nothing better than enjoying the fresh fish you catch or some fresh venison from a white-tailed deer, from the hunting season to feed our entire family.
We have a family friend that has owned restaurants his whole life. He recently shared his most popular recipe dish with us while we were in the Keys catching mahi and tuna. It is called “Grouper Fromage” and was served in his fine dining restaurant for years. He shared it with us and we decided to make it with our fresh Mahi instead of grouper and it was amazing. You can use any type of fish and here is the amazing recipe.
Fromage:
(equal parts) I used a cup of each to make for 4 -6 servings
1 cup of sour cream
1 cup of grated parmesan cheese
1 cup of mayonnaise
Stir together in a bowl and it becomes like a paste. Place the filets on a baking sheet and add a little seasoning on the fish or salt and pepper. Take the paste and top the fish with it, keeping it thick on top. Don’t rub it in. Bake on 400° for about 25-30 minutes. The paste should turn a light brown on top.
For additional taste and looks:
Add sautéed onions, tomatoes and peppers and put on top of it.
We also enjoy eating fresh sesame seared Blackfin tuna as well. My favorite way of making it is as follows:
Take olive oil and pour it on a plate. Dip your tuna steaks into the oil on both sides, then sprinkle blackened seasoning on all sides. Have black and/or white sesame seeds on another plate and cover both sides of the steaks. Then throw the tuna steaks into a hot skillet, on high heat, for about 60 seconds on each side.
(You are only searing the outside and leaving the inside rare.) Remove them and use a fillet knife to cut the steaks into thin slices.
Serve with soy sauce and wasabi!
This makes a great appetizer, or you can serve it with jasmine rice as a meal. I hope you enjoy these recipes as much as we do!
