Baked Hog Fish

INGREDIENTS

1 lb. Hog fish
Spices
Panko bread crumbs
Capers
Rosemary sprig
Lemon
White wine

DIRECTIONS

1. Preheat the oven to 375 degrees.
2. Place the filets in a pan, sprinkle your favorite spices over the fish (we used seasoned salt, garlic powder, onion powder, blackening spice, and a bit of bread crumbs).
3. Squeeze half a lemon over each filet and sprinkle the capers over each filet.
4. Pour the white wine so that it covers the entire pan; each filet should be sitting in the white wine, but just a tiny bit.
5. Place a rosemary sprig on top of each filet.
6. Cover with foil and bake for 15-20 minutes or until the fish is white and flaky.
7. Remove foil and broil just to brown the bread crumbs.

Serve with steamed broccoli and rice. Enjoy!
