Catch 2 Kitchen with Chef Billy: Grilled Mahi Mahi with Roasted Corn and Black Bean Salsa
Ingredients:
4-6oz filets of Mahi Mahi or other white fish Table spoon of extra virgin olive oil
Juice and Zest of two limes
1â4 cup of chopped cilantro
3 gloves of garlic diced
1 can of Black Beans drained and rinsed
1 can of whole kernel Corn Pan Roasted Slightly 1 Red Onion Chopped
1 Jalapeno seeded and diced
Juice and Zest of One Lemon
Salt and Pepper
Instruction
Rub the Mahi Filets with Olive Oil, Lemon Juice and the Lemon Zest, season with salt and Pepper. Mix all other ingredients together to make a salsa season with salt and pepper to taste. On a hot well-oiled grill cook the Mahi Mahi about four minutes on each side.
Serve the Mahi Mahi with the roasted corn and black bean salsa on top. Goes really well with rice cooked in coconut milk, enjoy!
