Ingredients:
• Four 6-ounce pompano fillets
• Salt and fresh ground pepper
• 1 garlic clove, minced
• 2 tablespoons sugar
• 2 tablespoons fresh lime juice
• 1 tablespoon Asian fish sauce or soy sauce
• 1 1⁄2 tablespoons finely grated fresh ginger
• 1⁄4 cup cilantro sprigs
Directions:
In a small bowl, combine the sugar with the lime juice, ginger, fish sauce and garlic. Season pompano fillets with salt and pepper and grill over hot fire roughly 3 minutes per side or until just cooked through. Transfer the fish to a plate or platter. Spoon the sauce over the top, garnish with the cilantro and serve.
